Carving out time for connection can sometimes feel like planning an expedition. Between busy schedules, endless to-do lists  and the rhythm of real life with a toddler, heading out for cocktails isn’t always realistic. But for us, a simple “sip + snack” ritual at home can be every bit as meaningful as an evening out. The key is intention. You in?

One of my favorite cozy pairings has been a baked brie, whether wrapped in puff pastor or baked with jam + nuts on top alongside a glass of chillable red wine, specifically, the House of Brown Red Blend. What Makes a Wine “Chillable”?

Not every red wine benefits from a chill, but certain styles absolutely shine when served slightly cooler. The idea is to highlight vibrant fruit and aromatics while muting harsher tannins. 

A good red blend checks all the chillable boxes and then some. These wines tend to balance bright fruit with subtle spice, offering an easygoing structure that works beautifully for relaxed evenings.

Aromatic & fruit-forward: Expect notes like hibiscus, tea rose, pomegranate and cherry, often accented by hints of spice such as cinnamon, clove, or even lavender.

Light in body, crisp in acidity: The palate is typically bright and juicy, with refreshing lift and minimal tannins, making it ideal for weeknight meals and cozy settings.

Blend of approachable grapes: Many chillable red blends feature popular varieties like Cabernet Sauvignon, Pinot Noir and Tempranillo.

Tips for Serving Chillable Red Wines (At Home or On Demand)

Here are a few tricks I’ve learned along the way:

  1. Don’t freeze it cold. You risk muting flavors, plus a big mess. Aim for fridge-chill, not “ice-cold.”
  2. Start with 20 minutes in the fridge, then adjust from there based on how full your bottle is or how warm your room is. You may also have a personal preference to leave it there longer. It’s totally your prerogative.
  3. Sip and let it warm a bit. These wines often evolve in the glass, so as it warms, new floral or spice notes might emerge. Take some notes and have fun with it!
  4. Use light, less tannic wines — Avoid heavily oaked Cabernets, big Syrahs, or dense Zinfandels when chilling. Think Red Blends, Beaujolais Nouveau’s and Pinot Noirs.

Pairing with Baked Brie + Chili-Fig Jam + Pistachios

Now, let’s talk about the food match, or better yet – snack match! Baked brie with that sweet-spicy chili-fig jam and crunch of pistachios is indulgent and layered. This is exactly where a chillable red wine really pulls its weight.

The juicy red fruit notes (pomegranate, cherry) in the wine echo the jam’s fruitiness and the acidity cuts through the creaminess of melted brie, cleansing the palate every bite. The wine refreshes between bites rather than dragging heaviness along.

In short: one bite, one sip, and the flavor dance feels effortless.
